A text string is an array of bytes

A little clarification, an ASCII string is an array of bytes (each character is representated by one byte), an Unicode string consists of word sized letters, thus one letter is repressented by one word (this because some asian (with ohers) languages have more than 255 charactes).

I noticed that my fasm-skel.zip was broken.

The attached zip has the fasm-skel code along with the need library code. Just unzip the pattod.zip to the %INCLUDE% directory.

Here's a modified version of the tutorial which you posted a link to Vortex... The modifications are small, but this is first and foremost done to support the include-library in the newest versions of FASM ;)
