Just mean something like the Instruction Format.
The details of the ModR/M SIB and so on.

Search the algorithm and source code forum for "opcode" tutorials by The Svin and you will find that he wrote about 7 tutorials (if I remember correctly) on that topic.

There are also the Intel manuals, but The Svin's tutorials are much easier to read.

Well you can't call them the Intel Manuals a tutorial - it is more like a reference book on the opcode encoding.
