Many VGA mode 13h demos use so-called ModeX.
Google with: +VGA +ASM +"MODE X", this should find some demos as well

When I got interested in programming the VGA many years ago when I was still programming in 16-bit DOS mode, I purchased in 1992 the following 1040-page book which covered all aspects of the EGA/VGA/SVGA programming:
Programmer's Guide to the EGA and VGA Cards (Second Edition), by Richard F. Ferraro and published by Addison-Wesley Publishing Company
Copyright 1990
The price for the book at the time was 32.95 US$ and I still have it.
That book is probably out of print but you may be able to get a second-hand copy from some used book dealers.
