Does anyone have an idea of a good place to start reading about the Apple? I know it has to do all of the things the x86 does but have not a clue about its registers or instruction set.

If you want to follow the linage, Wikipedia has it covered. Simply pick which version you want to learn and look up the respective instruction sets. I think all of them are fairly well documented.
