Assuming I have underlining access to kernel (as a driver) and etc. how can I protect an apps memory. For instance, some game hack protections don't even allow TaskManager to kill the game or anti hack process. Another example, some anti viruses (Most of them, Kaspersky and Norton included) are protected. How is this done? I've tried VirtualAllocEx and some other api but it hasn't worked. Any help?

kernel side hooking, much like rootkits...
...but be warned this is not the place to discuss those topics
